Howdy from waaaaay down under...

Yeah... I wish! I'm so, not "down under" but 'up under' (ha!)

So, whatcha been doing? I've truly been missing all of my blogging friends. It's been a really rough couple of weeks dealing with the cancer and chemo side effects. My health has not been the greatest and then just add on the normal stress of every day, and you've gotten the reason why I've been away. I promise not to do so next time, but to "vent" to all of you for support.

Now, on to what's been cooking.

Cream Cheese Pound Cake (sorry, no "inside shots" we ate it/gave it away too fast)

RECIPE:
3 sticks butter (not margarine), softened
3 cups sugar
3 cups CAKE flour (although AP flour will work)
8oz cream cheese, softened
6 eggs
1 tsp vanilla


Preheat oven to 300.
Cream butter, sugar and cream cheese until fluffy. Add one egg at a time. Scrape the sides of the bowl after each egg, make sure there's no lumps. Add vanilla. (Sift flour before adding) add all of flour to bowl, mix until completely combined.

Grease and flour bundt pan - pour all ingredients into pan. Bake for 1 hour 20 minutes, or until the cake spings back when you touch it (note: watch the cake after the 1h5m mark.)

Oh! I'm so sorry to hear about what you're going through. Please keep as well and as strong as you can!

Now, as for this cake - wow! Perhaps I can let myself have a sliver - this is dangerous.
