Shrimp Mashed Potatoes

What could I possibly say... it's SHRIMP and MASHED POTATOES, together. Married. Together in all of their fluffly, flavorful glory.

So, again, I owe this one to Paula... however we'll be putting another spin on these REAL SOON.

RECIPE:
1/2 lb precooked shrimp, chopped
1/2 c hot milk
1/2 c sour cream
1 stick butter (whatever.... do it!)
8-10 red potatoes
salt
pepper
paprika
chives (I forgot to use)


Slice and boil potatoes. Drain and re-fill pan with potatoes. Roughly mash up potatoes; add shrimp, butter, sour cream, salt and pepper (to taste), and mash some more. Add milk and chives, and continue to mash until you have desire consistency. Plate potatoes garnishing with chives..... enjoy.


Someone, please try this out with lobster! If I could cook them, I would. It would truly remind me of the dinner me and hubby had a Maestro (uber-LA scene restaurant). That dish was "to die for!"

Lazy Taters!

Not only was "I" lazy for dinner last night... so were my taters!
They just LAID there while I dressed them, and then they didn't put up a fight when we ate them. Awww... don't feel bad for them, it was their
destiny!









RECIPE:
Potatoes (use as many as you need; 1 potato yields 4 taters)
Sour cream
Green onions
Cheddar/Jack cheese
Mozarella
Olive oil
Salt, pepper and garlic salt

Rinse and clean your potatoes. Cut in half width-wise, then cut the halves in halve. Slice a portion of the bottom, off the potato, so that it will sit straight up on a baking sheet. Brush olive oil on the tops of the potatoes, then sprinkle the season over all of potatoes. Bake at 375 degrees for 1 hours, on the very bottom of your
oven. Pull the sheet out of the oven, sprinkle a combination of the cheeses on top. Put sheet back in oven for 2-3 minutes.

Place a "dollop" of sour cream and green onions on top of each tater. Enjoy

What's for dinner?

Bacon-wrapped meatloaf and Potatos Au Gratin.

So I've actually done this "meatloaf" before... I think this time the overall flavoring of the meatloaf was better, but I think the look of the bacon last time was best. Anyways, my stomach didn't seem to mind or make a comment, so all was well.

Meatloaf:
Just make your standard meatloaf (meat, crackers, seasoning, egg, onions). Form log; cover with your choice of bacon. VOILA!
(don't you wish all recipes were this simple - well, that is if you've made meatloaf before) If you haven't, here's a recipe for THAT - I'll have to try the brown sugar ketchup glaze later.

Potatoes:
Well, I know the RECIPE said to "cook" them, but they didn't say how. So I fried them (I know... I have an ulcer). Then I covered them with the sauce, cheese and then backed them. They turned out pretty good (for a newbie!)




You can't go wrong with bacon, cheese and potatoes, can you?
